Mayonnaise has long been a staple condiment in many kitchens, but traditional mayonnaise often contains unhealthy ingredients and high amounts of cholesterol. As an advocate for plant-based living and healthier options, I have developed a delicious recipe for a homemade plant-based mayonnaise. This creamy and flavourful sauce is not only a healthier alternative but is also incredibly easy to make. 

Here’s my recipe for this delectable plant-based “Mayonnaise” Kinda a Sauce so that you can enjoy it in your favourite dishes.

“Mayonnaise” Kinda a Sauce 

Ingredients
  • 1 cup raw cashews  (soaked overnight, or for at least 2 hours, then rinse)
  • 1/2 cup aquafaba (the liquid in a can of chickpeas)
  • 2 tablespoon water
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons monk fruit (substitute with brown rice syrup, agave or maple syrup)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 teaspoon salt (or to taste)

Instructions
  1. Put all the ingredients in a blender (I used Tefal Cuisine Companion)
  2. Scrap down sides of blender and keep repeating until the desired consistency.
  3. Taste, because you may want more tang with vinegar, sweetener or salt 
  4. Refrigerate until chilled (about 2 to 4 hours. It thicken as it cools.
  5. Makes about 1 cup, enjoy

Usage Suggestions:
- Spread this plant-based mayonnaise on sandwiches, wraps, or burgers for a creamy and tangy element.
- Use it as a base for homemade salad dressings or creamy dips.
- Add a dollop to your favourite plant-based salads, such as potato salad or coleslaw.
- Incorporate it into vegan pasta salads or as a flavourful sauce for roasted vegetables.
- Use it as a dip for crispy oven-baked fries or homemade onion rings.
